For a 75 gal tank, would i need a protein skimmer? What are the
benefits of having a protein skimmer and what does it actually do
besides the obvious?

In *almost* every situation a protien skimmer is a necessity. Besides from the obvious removing of protiens and the like, I think to some degree they also aid in replenishing the oxygen content in the water column. (like an airstone does in a freshwater tank).

IMO, a skimmer is like a continuously working insurance... while removing excess wastes(proteins) and aiding in O2, it is gonna be there when the tank decides to take a dump or a crash is in the process.
