Would I acclimate a starfish the same way I would a fish?

Some starfish are more sensitive than others. Brittle stars tend to be more hardy (I assume that's what you went with).
As a general rule, I typically use a drip line and drip acclimate them for an hour or so.

I never acclimate anything other than fish, and the way I do that is to float the bag then cut a slit and face the bag slit down in the water for about 20 mins.
Never had any losses.
