would it be beneficial to take out the sponge and carbon out of my power filter and replace it with reef rubble instead ?

Definatly. The sponge and carbon would become nitrate factorys.

The LR rubble would be a good idea, if you want to run carbon, put a few tablespoons of it in a media bag (rinse thoroughly) and toss that into the power filter so that water flows over/around the bag and not forced through it.

Any media can be a nitrate factory and it's easier to pull out, rinse or replace sponges and carbon than rubble. Just my O2.

Good point but I do think I think that it would be a lot less likely with the rubble.
