Default Another Cycle Question: Ammonia

How long does it typically take the ammonia & nitrate "spike" to happen? When I started my hex I never had an ammonia/ nitrate spike, started it with live rock and "live" sand. I started the 150 w/ live rock and dry sand. So if I never get this "spike" can I just assume the tank "cycled" after the normal 6 week waiting period? Or are there other things I can look for to let me know that the cycle is starting and over with?
