I'm not good with snail ID's the second pic just looks like different colors on your rock. Mabey even red coraline. Yes most of the life you have in there will live. I try to keep my ammonia below 1 ppm during a cycle some go as high as 5 ppm. All up to you.

That snail looks fairly similar to mine except the "shell" area on your's has a green tint. I would say either stomatella or Dove Snails (Anachis avara?).
Stomatellas usually are flatter. So, my top guess is going to be Dove. Both are reef-safe and will spawn/breed.

I found a really nice site that gave some really good info on snails. http://www.marinelifephotography.com/ It is mostly photography in Hawaii but the families are the same so maybe you can find your snail here.
The second pic - if you are asking about the orange stuff - it's an encrusting sponge that may or may not stick around. Sponge generally dissipates as it's been exposed to the air but some of it has stayed around for 3 months now in my tank.
Yes the snail and the sponge will survive your cycling.

bob, its definitly not a bad thing that your snails will breed. Just check on them every month or so and make sure that they're not taking over your tank.
