I think they get up to 6-inches, but not 100% sure.

OK, I have a ~10 year old yellow watchman paired with a tiger pistol shrimp. Would there be a conflict if I added small gobies of the aforementioned type?

By small you mean the non-shrimp small gobies....eg. green-banded, red head, etc.? I don't think that would be an issue...but no real experience with larger gobies.

On the new tank I am setting up, I plan to have at least four pearl headed jawfish. I'd like to figure out a way to keep the barebottom tank and keep them though.

How about a cylinder with one of the ends covered, & it filled with sand?

Yes, those are the type I'm talking about. My main concerns with these have been short lifespan (Jim thanks for answering that earlier in this thread), becoming pistol shrimp snacks, and will they hide so much I never see them. Can anyone help answer the other two?

I am thinking about making the just the back of the tank bare-bottom.
